The objective of the project: Valorification of some vegetable by-products by using them to obtain bakery products enriched in bioactive compounds

 

Specific objectives:

  • compositional characterization of the raw materials in order to use them to obtain bakery products with functional potential;
  • obtaining wheat flour enriched with different percentages of vegetable by-products, resulting from the extraction of cold pressed oil;
  • realization at the laboratory level of bakery products with the addition of vegetable by-products resulting from the extraction of cold pressed oil;
  • realization at the pilot level of bakery products with the addition of vegetable by-products resulting from the extraction of cold pressed oil.
