The objective of the project: investigation of mycotoxin content of food spices and other complex food matrices frequently consumed by Romanian consumers (bread, bread based products with filling, breakfast cereals) and establishing the time of occurrence and the degree of mycotoxins contamination in relation to the product shelf life, type of food spoilage fungi and physico-chemical attributes of the assessed products. 

Specific objectives:

  • Research on establishing the degree of mycotoxin contamination of the studied food products (bread, bread based products with filling, breakfast cereals and spices), before and after the appearance of  food spoilage fungi;
  • Microbiological identification and characterization of the food spoilage fungi, following the microbiological assessments of the selected food matrices;
  • Optimization of the working parameters according to the occurrence time of the food spoilage fungi and type of food product;
  • In-house validation of the ELISA methods used for the detection and quantification of deoxynivalenol, zearalenone, total aflatoxins and ochratoxin A for the selected food matrices.
