The objective of the project: Valorisation of Jerusalem artichoke tubers (Helianthus tuberosus), through obtaining a functional ingredient with high nutritional value for the diabetic diet
Specific objectives:
- Study concerning valorisation, at international level, of Jerusalem artichoke tubers (Helianthus tuberosus) to achieve functional ingredients and foodstuffs for diabetics
- Achievement of a functional ingredient (powder), from Jerusalem artichoke tubers (Helianthus tuberosus), for the diabetic diet
- Elaboration of the technical documentation for the achievement of functional ingredient (powder), from Jerusalem artichoke tubers (Helianthus tuberosus), for the diabetic diet
- Dissemination of information
