General objectiv: Wine by-products valorisation for functional ingredients, to strengthen food, in order to increase nutritional quality and antioxidant capacity.
* Technologies for processing wine by-products in order to obtain functional ingredients for food fortification;
* Functional ingredients obtained from wine by-products (pomace flour, grape seed flour, grape seed oil), characterized by their quality attributes;
* Natural yeast enriched in phenolic compounds, using functional ingredients obtained from wine by-products;
* Bakery products fortified with functional ingredients obtained from wine by-products, characterized in terms of quality (2);
* scientific sessions and ISI/BDI articles;
* workshop for disseminating the results.
