The objective of the project: Research on the evaluation of the nutritional quality of canned foods in order to increase food safety and consumer protection

Specific objectives:

• Study on the nutritional indicators mentioned by the labeling legislation, for the heat-processed products (eg. canned vegetables and fruits) and the influence of the packaging on the quality of the products (analysis method; imposed / significant values);

• Experiments regarding the determination of the main nutritional indicators (energy value, proteins, carbohydrates, lipids, macroelements), as well as of some contaminants in the packaging (heavy metals) in order to evaluate the quality of canned vegetables and fruits.
