The objective of the project: Identification, valorisation and quantification of bioactive compounds that may increase the nutritional value of food products and food supplements
Specific objectives:
- Studies on the characterization of the antioxidant properties for bioactive compounds present in different food matrices
- Experimental research on optimal methods of the extraction of bioactive compounds from food matrices and the determination of total antioxidant capacity
- Experimental research on the determination of individual bioactive compounds/classes of compounds in various agri-food products
- Experimental research establishing the correlation between the amount of bioactive compounds and the total antioxidant capacity of the food matrix
