Project title: Research on the superior valorization of vegetable waste rich in nutrients and bioactive compounds, in the context of the circular economy and the promotion of "green technologies"

The project has as its general objective the superior valorization of vegetable waste rich in nutrients and bioactive compounds (cauliflower and broccoli leaves and stems), in the context of the circular economy and the promotion of "green technologies", in order to obtain functional ingredients with high nutritional value and antioxidant potential, concentrated polyphenol extracts and protein concentrates, beneficial in the process of fortification of food products.
Through the research undertaken within the project, functional ingredients (powders) with high nutritional value and antioxidant potential will be produced and characterized from a qualitative point of view, by valorizing cauliflower and broccoli waste (leaves, stems). Also, innovative food products (bakery, pastry) fortified with these functional ingredients (powders) will be produced and characterized from a qualitative point of view, in order to increase their nutritional value and antioxidant capacity. At the same time, the research undertaken will develop and optimize a "green technology" for obtaining concentrated polyphenol extracts from cauliflower/broccoli waste, which will be used to fortify a range of pasta. Within the project, a biotechnology for obtaining protein concentrates from the "green juice" resulting from broccoli/cauliflower waste will be developed and optimized.
