The overall objective of the project is to identify and analyze cost-effective, efficient and innovative sources of protein in order to develop foods – as protein sources, with a positive impact on human health, the environment and biodiversity. Different sources of protein (plant and animal) will be analyzed on the quantity and quality of proteins through a multidisciplinary approach that will include physico-chemical, rheological, food technologies for practical applications, sensory and textural evaluation, volatile odor composition, consumers’ preference regarding the obtained products
Specific objectives:
- Study on the consumption trends of protein/protein rich foods at national/European/global level
- Identification, characterization (sensory, physico-chemical and microbiological, functional, rheological) of sources of proteins of plant and animal origin
- In vitro and in vivo tests to evaluate the effect of protein source products
- Development of food products - protein sources.
