The objective of the project: intensifying research on meat products in order to increase food safety and consumer protection
Specific objectives:
- Research on the hygienic quality of traditional products of animal origin by means of microbiological analysis methods;
- Research on the quality criteria of traditional products through organoleptic and physico-chemical analyzes in order to characterize the quality criteria accepted and presented in the specifications of the traditionally certified products.
