The objective of the project: Valorisation of apple waste in the juice industry, by obtaining a functional ingredient with high nutritional value and antioxidant potential.

Specific objectives:

  • Study concerning valorisation, at international level, of apple waste, in order to obtain functional ingredients
  • Achievement of functional ingredient (powder), from apple waste in the juice industry, through hot air dehydration processes, respectively, lyophilization
  • Elaboration of the technical documentation for the achievement of functional ingredient (powder), from apple waste in the juice industry
  • Dissemination of information
