The objective of the project: development of a method for determining the cis/trans isomers of fatty acid methyl esters from French fries (chips) or other similar products.

Specific objectives:

  • Literature review regarding the trans fats consumption effect on the consumer health, the influence of some technological factors on the formation of trans fats in food and the legislation in the field.
  • Development of a method for determination of cis/trans isomers of fatty acid methyl esters from standard mixtures of oleic (C18:1), linoleic (C18:2) and linolenic (C18:3) acids.
  • Application of the developed method for the determination of cis/trans isomers of oleic, linoleic and linolenic acid methyl esters from French fries, chips and other potato-based products.
