The objective of the project: implemementation in laboratory of a GC-MS method for fatty acid methyl esters determination from fats/oils of animal and/or vegetable origin. Investigations regarding the influence of the type of fat/oil used in the manufacture of biscuits on the fatty acids and trans fatty acids composition of end products.

Specific objectives:

  • Development, validation and authorization of a GC-MS method for the simultaneous determination of 26 fatty acid methyl esters from animal and/or vegetable fats/oils.
  • Study on the comparative analysis in FAME of some fats/oils of animal and/or vegetable origin by the developed method and by applying the NMR technique.
  • Research regarding the influence of the type of fat/oil used in the manufacture of biscuits on the composition in fatty acids and trans fatty acids, in order to ensure nutritional security and food safety.
